Job Summary
Key Responsibilities
Meat Preparation & Processing
* De-bone, cut and trim a variety of meats including beef, lamb and poultry
* Prepare meat into various cuts such as steaks, chops and roasts according to retail standards
* Ensure minimal wastage and maximize yield during meat processing
Production & Manufacturing
* Produce value-added meat products such as sausages, boerewors and mince
* Follow standard recipes and production procedures for consistency and quality
* Assist with stock preparation for daily retail display
Hygiene & Food Safety
* Maintain strict hygiene and sanitation standards in line with food safety regulations
* Ensure all equipment, tools and workstations are cleaned and maintained properly
* Adhere to cold chain management and proper storage procedures at all times
Stock Control & Display
* Assist with stock rotation (FIFO) and inventory control
* Ensure meat displays are well-presented, fresh and appealing to customers
* Monitor product quality and remove any expired or substandard items.
Minimum Requirements
* Matric (Grade 12)
* 2 – 3 years’ experience as a Blockman within a retail butchery environment
* Strong knowledge of meat cuts, processing techniques and portioning
* Experience in producing processed meat products (boerewors, sausages, mince).
